The Millersville University definition of Sustainability is “improving the quality of human life while living within the carrying capacity of supporting eco-systems". This conveys the idea of sustainability having quantifiable limits, but it is also a call to action, a task in progress. Sustainability at Millersville University is the long-term maintenance and responsibility, which has environmental, economic, and social dimensions, and encompasses the concept of stewardship, the responsible management of resource use. Gluten Free and Vegetarian Options

MU Dining has a registered dietitian available for free consultations. Our dietitian specializes in education on diets including: diabetic, low fat, low salt, and weight loss. Contact MU Health Services to schedule a dietary consultation. We have also provide allergy-free options in many dining halls on campus such as:

Marauder Roots a vegetarian, gluten-free area. Some dishes served will be Quinoa, Vegetarian Paella, Kasha, Fresh Roasted Vegetables, and Farro Grain

Allergy-Free Area omits shellfish and nut products from its dishes
Yogurt Bar includes all-natural ingredientssuch as strawberries and blueberries

Fresh Fruit and Veggie Bar made to order, fresh fruit and veggie cups

Fruit and Veggie Smoothies a healthy way to recover from a work out, grab a snack or use as a meal supplement
